Omelette with mustard leaves

Ingredients -Serves 2
4 eggs
1 onion
1 clove garlic
500 g mustard leaves and fresh flowers
1 teaspoon of Trikatu Virya®
1 teaspoon of Appeto Virya®
1 teaspoon of Fruit Masala Virya®
Rock salt to taste
extra virgin olive oil to taste

Method
Chop the onion and garlic cloves finely and add to a pan to simmer with a little water. Wash and cut the mustard leaves and add to the pan with trikatu Virya®, Appeto Virya®, salt. Cook over medium heat. Once cooked, season the leaves with a little extra virgin olive oil.
In a separate bowl, beat 4 whole eggs thoroughly with Fruit Masala Virya® with a little salt. Add the egg mix to the cooked mustard leaves, stir, cover and cook, just a few minutes.
Please note: before pouring the eggs in the mustard leaf mix, make sure that the cooking water has evaporated from the leaves. In this way you will get a more compact and soft omelette.
