Pear cake with Amaretti

Ingredients for 6-8 people
2 eggs
150 g of sugar
1 glass of oil (ca 10 ml)
400 g white spelt flour
3 pears
60 g of Italian Amaretti cookies
30-40 g dark chocolate
Milk to taste
1 dose of baking powder
1 teaspoon of Fruit Masala Virya®
Method:
Whisk the eggs with the sugar, then add Fruit Masala Virya®, the oil, stirring constantly. Slowly add the flour preferably sifted, softening it all with milk to make a fairly thick batter making sure that no lumps are formed. Finally stir in the baking powder.
Pour ¾ of the dough in a buttered baking dish, then add the peeled pears cut into pieces, the finely crumbled amaretti, the chocolate chopped into small pieces. Pour the remaining dough over it and sprinkle the surface with 2 tablespoons sugar.
Bake at 180 ° for about 30 min. Once cooked, let it cool in the oven.
