Curried Pumpkin Velvet soup

Ingredients for 4 people
1 kg of sweet yellow pumpkin
1 medium size leek
2 cloves of pink garlic of Sulmona
2 teaspoons of medium hot curry
1 teaspoon Trikatu Virya®
stale bread to taste
clarified butter (ghee) to taste
rock salt to taste

Preparation
Wither the finely cut leek and garlic with a little water. Add the peeled and diced pumpkin, cover it with water so that there is a finger of water above its level, then add the medium hot curry, the Trikatu Virya®, the rock salt and boil gently. When the pumpkin is cooked, blend it and add some ghee. Serve warm with stale bread toasted in the oven.
