Risotto with porcini mushrooms

Season: late summer-fall

Ingredients for 2 people

300 g of fresh Porcini mushrooms

200 g of white rice
1 onion
1 clove of garlic
parsley
1 teaspoon of Appeto Virya®
1 teaspoon of Trikatu Virya®
ghee (clarified butter)
Salt to taste.
1/2 glass of white wine
1 liter of vegetable broth


Preparation
In a saucepan, fry the onions and garlic in a little water. Once they are withered, add the chopped mushrooms, the wine, Appeto Virya®, Trikatu Virya®. Cook for 5 minutes at moderate heat, then add the rice and mix while adding the broth until the cooking is completed. Remove from the heat, add ghee, chopped parsley and serve hot.
