Celeriac Cake

Ingredients Serves 4

1 package of short puff pastry
600-700g celeriac
1 onion
2 cloves garlic
2 eggs
80g soft goat cheese
3 tablespoons spelt flour
½ teaspoon of nutmeg powder
½ teaspoon of Appeto Virya®
½ teaspoon of Trikatu Virya®
½ teaspoon of allspice
80 ml goat milk
1 tablespoon chopped parsley
salt rock to taste
Extra virgin olive oil to taste

Method
Finely chop the onion and garlic cloves, add to a pan and let to simmer in a little water. Add the celeriac, cut into thin slices, the Trikatu Virya®, the Appeto Virya®, a little oil and salt. Cook over medium heat and dry any excess water.
Take a bowl and mix separately 2 eggs with the cheese, nutmeg, allspice and parsley. Add the sieved flour a little at a time and then the amount of milk to obtain a creamy consistency.
Line a cake tin with puff pastry and prick the bottom with a fork. Place the celeriac mixture in the tin and pour the mixture with the cheese over it. Bake in the oven at 180 °C, for about 40 minutes.
