Yellow squash soup

Season: Autumn, Winter

Ingredients for 4 people:
500 g peeled yellow squash/pumpkin cut in cubes
500 ml vegetable broth
1 onion
1 shallot
1 clove of garlic
1 big potato
½ teaspoon of nutmeg powder.
½ teaspoon Trikatu Virya®
½ teaspoon Indian Tea Masala Virya®
Rock salt to taste
Clarified butter (ghee) to taste

Preparation:
Wither the finely chopped nion, shallot and garlic with a little vegetable broth. Add the squash, the remaining vegetable broth, the diced potato, Trikatu Virya®, the nutmeg powder, Indian Tea Masala Virya®, rock salt and clarified butter. Cook on moderate heat and, at the end of the cooking, whisk all with the food processor.
It is great to serve the very hot soup with baked bread croutons.
